Where to, in Italy, anyway? I am afraid won't be able to help you much anyway; but if at least you write where you'll be going, it might be easier to point out some places...

I guess that it would be very important to know which part of italy you will be travelling to. Keep in mind that these last 5-10 years, the level of the water in many of north Italy's rivers have decreased a lot, and in summer certain mountain rivers are practically non existent.
Now if you are travelling to eastern Italy, then you may as well go a little further to Slovenia just over the border and go paddle on the Soça River (Isonzo in Italian) above Caporetto at Boveç.
Basically here you will find half the European WW comunity paddling on the Soça. There are all grades, right from the 6th grade, down to 2nd.
This is one of the few rivers that basically has water throughout the year.
And one can see paddlers from the UK, Czech Republic, Holland, Italy....basically from everywhere imaginable.
And yes, they also rent our kayaks and gear.

The Dora Baltea normally has sufficient water at least until the end of august.. So that's an option. It's located in th North west.
Hi, super to see so many answers. We are flying to Pisa but are planing to take a train up north but the question is how far we have to go and where.

what about the Apuane Alps or is that to far south????
